My state wants its sales tax on my recently completed RV-7. On what do I pay the tax? Does anyone have experience with this?

What state? And what have you been contacted with? A form? A letter?

Florida. I got a "Dear Aircraft Owner" letter saying I purchased or brought an aircraft into the state and owed sales tax.

Call them. They're actually quite reasonable when you talk to them.
For the most part, sending a receipt of your kit, along with a check for amount due (roughly 6% depending on where in Florida you live and have the aircraft registered) will do the trick. I got the same letter for my Tango. I sent copies of my checks along with the contract that showed sales tax, and they were satisfied with that.

I followed the advice of someone on the Sonex discussion board, and paid sales tax on the "complete" kit I got from Sonex the moment I got the printed receipt. If you wait until you complete your project, they'll want to see a receipt for every build-related purchase you made.

That may be true in WA, but no where is it universally enforced. At best I'd say that's a State by State thing and how knowledgeable the builder's tax office is on E-AB aircraft.
